The oil that is extracted from the kernel or white meat inside a ripe coconut is called coconut oil. The oil has many applications in the food, health and beauty industries and is edible just like olive oil or almond oil.

Note that there are several terms used on the label of the coconut container or product, and it is better that you understand what these terms are so you know the extent of quality of the oil when buying it.

First is the labelled as certified organic coconut oil, and this means that the coconuts coming from this oil did not have pesticides applied to the plant. Second term is the all-natural label where the oils are manufactured without any chemicals with it when it was produced. Another two terms are refined and unrefined, with refined suggested as removing of impurities and coconut flavour because of a further process, and the unrefined with no additional refinement process that leaves the smell and flavour of the coconut oil intact.

The coconut oil can be labelled too as virgin and extra virgin, although there is no difference except that the word extra reminds you of the higher level grade of the coconut oil.

Raw coconut oil is termed to coconut oil which was extracted without using high level of heat.

It is through cold-pressed, expeller-pressed and centrifuges that the oil from a fresh coconut is extracted. In order to produce the coconut oil from the kernel, all the proteins, water and fiber are extracted and removed from it. You would need 65 coconuts to be able to produce a single gallon of coconut oil plus several processes to accomplish the job.

There are two methods in which coconut oil can be extracted from the kernel and this is through dry or wet process. Using the dry processing, the kernel is removed of its meat, and the meat is left out to dry under the sun, then the dried coconut meat undergoes either pressing or dissolved using solvents. On the other hand, the wet process would use the raw coconut meat from the kernel and directly pressed that would result to a liquid mixture of oil and water.
